Currently, problem of producing quality food products became particularly urgent in connection with foreign policy terms. Requirements for animal products are legally defned, and accordance with these requirements is a condition of production release on the domestic market and the market of the Customs Union. Authors found that the adaptive reserve of animals is quite high, as evidenced by the high level of productivity and performance of reproduction. Changes manifested by depression of hematopoiesis, immune suppression, violation of protein metabolism occur in the process of adaptation of animals to environmental conditions.These changes affect the protein and amino acid composition of received milk. Authors assessed the amino acid composition of the milk subjected to radiation processing by beam of accelerated electrons at absorbed dose of 10 kG and studied bacterial contamination of radiation-processed milk to assess the sterilizing effect of the given dose.Tendency to increase of the content of most amino acids in the samples subjected to radiation processing, revealed by amino acid analysis of milk. Study of bacterial contamination of milk showed that the value of QMAFAnM in samples irradiated with a pulsed electron beam at a dose of 9,7-10,2 kG did not exceed 1 × 10 2 CFU/g, with the normative value of the milk premium CFU less than 1 × 10 5 per gram. Thus, radiation processing of milk by beta-radiation at the dose of 10 kG and more ensure microbial contamination of milk on a level corresponding to the highest quality milk.
